Hearty Corn Quinoa Muffins Gluten Free

You will love these healthy, hearty moist muffins! Prefect for a cold, crisp day. Full of down-home, cornbread flavor that will make your butter melt! Quick and simple to whip up before you hit the trail for an adventure! Pack them in your saddle bag! You can make these muffins dairy free by substituting in your favorite milk alternative. As always, make sure your flours and ingredients are gluten free. For this recipe, I use Bob’s Red Mill gluten free flours and I love the result. As for eggs, you know I love to use them straight from the farm and the same goes for my milk! Happy Baking!

Hearty Corn Quinoa Muffins Gluten Free

1  cup gluten free quinoa flour

1 cup gluten free yellow corn meal*

2 Tbsp. gluten free baking powder

1/2 tsp. gluten free xanthum gum

1 tsp. sea salt or REAL salt

1/3 cup local raw honey

6 Tbsp. grape seed oil or olive oil

1 cup whole raw milk or milk substitute

2 large farm eggs

* for a light cake-like crumb use corn flour instead of meal!

Preheat oven to 400 degrees F. Place rack in center of oven. Butter or line a muffin pan with muffin papers. Sift dry ingredients in a bowl and stir til they’re evenly combined. In another small bowl, whisk wet ingredients together. Add the wet mixture to the dry and stir with a wooded spoon just until smooth. Be sure there are no large dry lumps. Spoon into muffin tins filling each well half full. Bake 17 to 20 minutes until golden on top and toothpick inserted in center comes out clean!

Makes about 12 muffins.

(Served best with real, creamy grass-fed butter!)
